We are seeking a creative, disciplined, and energetic Sous Chef to act as second-in-command and maintain our high standards of fusion dining.
Key Responsibilities
- Kitchen Leadership: Lead daily operations alongside the Head Chef, stepping up to manage service seamlessly in their absence.
- Menu Development: Help invent and refine fusion dishes—marrying Japanese precision (knife technique, dashi, sushi, tempura) with Brazilian spirit (churrasco, tropical produce, cassava, rich marinades).
- Quality & Consistency: Oversee all food prep and final pass plating to guarantee every dish leaving the kitchen meets Nipo’s premium standards.
- Team Management & Mentorship: Direct, train, and inspire the brigade (Chefs de Partie, Commis, and Porters), fostering a collaborative and high-energy kitchen environment.
- Financial & Inventory Control: Manage food costs, portion control, yield tracking, supplier communications, and stock takes to maximize station profitability.
- Compliance & Hygiene: Maintain strict adherence to health, safety, food hygiene, allergen protocols, and HACCP reporting.
Requirements & Skills
- Experience: Minimum 2–3 years of leadership experience as a Senior Chef de Partie or Sous Chef in a fast-paced, high-end restaurant.
- Culinary Mastery: Deep technical knowledge of Japanese culinary techniques, South American/Brazilian flavour profiles, or high-concept fusion kitchens.
- Operational Control: Demonstrated ability to manage GP margins, kitchen labour costs, and waste reduction.
- Leadership Style: Strong command under pressure, excellent communication skills, and a passionate, proactive approach to problem-solving.
