In this role, your main functions include the preparation and service of hot and cold dishes, responsibility for the section, and carrying out ordering and stock rotation where necessary. This is a fantastic opportunity for an individual who has a good understanding of a kitchen at this level or whom is a CDP ready for the next career move.
What You’ll Do
- Taking control of the kitchen when the Executive chef and sous chefs are not present.
- Estimating and communicating daily production needs
- Responding appropriately to guest needs during hours of operation
- Ensuring that internal customers are communicated with on a daily basis
- Full awareness of all menu items, their recipes, methods of production and presentation standards
- Assessing quality control and adhere to service standards including the support of food cost control
