General Manager, Oowee Diner North Street

Oowee Diner is one of Bristol’s most loved independent restaurants, and North Street sits at the heart of the business as our flagship Diner.
Launched by our founders, Charlie and Verity, in 2016, Oowee is heading into its tenth year. We are now looking for an experienced General Manager to lead the team at North Street and take this important restaurant into its next chapter.
This is a brilliant opportunity for a proven General Manager who loves leading people, enjoys the pace of a busy operation and wants genuine ownership of their restaurant.
You will be joining a great team with strong processes already in place. We are not looking for someone to arrive and change everything. We are looking for someone who can understand the team, earn their trust and create an environment where people want to perform at their best.
The restaurant
North Street is a busy, high volume restaurant that prides itself on community, great food and an excellent guest experience.
Alongside our eat in and takeaway business, we have a significant delivery operation through Deliveroo. Providing a market leading delivery experience sits at the core of what we do, so this role requires someone who understands how to manage both a busy restaurant and a high performing delivery operation at the same time.
The business is strongly kitchen focused. You do not need to come from a specific brand or background, but you must understand how a busy kitchen works. Experience in QSR, fast casual or another high volume kitchen environment would be an advantage, but it is not essential.
What matters is that you understand kitchen flow, cooking processes, food safety, health and safety, speed of service and how to lead a team through a demanding shift without losing control of standards.
The opportunity
As General Manager, you will have the autonomy to lead North Street as your restaurant, with the support of the Oowee head office and senior leadership team.
A lot of the foundations are already there. The processes are in place and there is an experienced team around you. Your job is to bring everything together through strong, thoughtful and consistent leadership.
People will be at the centre of your role.
You will understand that different people respond to different styles of management. You will know when to coach, when to challenge, when to listen and when to step in. You will be able to work with people from a wide range of backgrounds and cultures, adapt your approach and build genuine engagement across the team.

What you will be responsible for
- Leading, coaching and developing the North Street team
- Building strong relationships and becoming a trusted, visible leader
- Creating an inclusive, positive and high performing culture
- Leading busy services across the kitchen, restaurant and delivery operation
- Ensuring the team follows established processes consistently
- Managing and improving Deliveroo metrics and overall delivery performance
- Protecting food quality, order accuracy, speed of service and guest experience
- Taking ownership of the restaurant P&L and delivering strong commercial results
- Managing labour, food costs, waste and other controllable costs
- Completing weekly reporting and turning performance data into clear actions
- Managing stocktakes, stock control and stock reporting
- Maintaining excellent food safety, health and safety and operational standards
- Recruiting, onboarding and developing team members
- Running the site independently while working closely with head office
About you
You will have at least three years’ experience as a General Manager within hospitality, restaurants, QSR, fast casual or another relevant high volume environment.
You will also bring:
- A strong track record of leading and engaging busy teams
- The ability to manage people with different personalities, backgrounds and motivations
- Experience coaching managers and team members to improve their performance
- Strong kitchen knowledge and an understanding of kitchen processes
- Confidence leading busy, high pressure shifts
- Experience managing a restaurant P&L
- A solid understanding of labour management, cost control, stocktaking and reporting
- Knowledge of Deliveroo or similar delivery platforms
- An understanding of delivery metrics and how operational decisions affect performance
- Excellent communication and sound commercial judgement
- High standards without the ego
- The confidence to take ownership and run a restaurant independently
Above all, you will be someone people want to work with and want to perform for.
You will not need to be the loudest person in the room. You will need to be consistent, credible and able to bring people with you.
