Job Summary
We are seeking an experienced and hands-on Restaurant Manager to lead Blackwoods Bar & Grill, the intimate restaurant within Nira Caledonia, a luxury boutique hotel with 27 guest rooms and a 10-table dining room.
This is a highly visible role focused on delivering exceptional, personalised service while maintaining strong commercial and operational standards across both breakfast and dinner service.
Duties
- Lead and manage the restaurant floor during dinner service, ensuring a polished and memorable guest experience.
- Oversee breakfast operations and provide hands-on support when required.
- Create weekly rotas for the Breakfast and Dinner teams, balancing service requirements with effective labour cost control.
- Lead, motivate, and develop the team through regular coaching, training, and service briefings.
- Deliver training in service standards, food and beverage knowledge, wine and whisky, and appropriate up-selling.
- Maintain strong communication between the Breakfast and Dinner teams.
- Manage guest enquiries, feedback, and complaints professionally and effectively.
- Build positive relationships with hotel residents, regular guests, and local customers.
- Complete monthly stock takes, investigate variances, and report results to the Hotel Manager.
- Manage ordering, stock levels, and supplier relationships while controlling wastage and protecting gross profit margins.
- Maintain the Toast POS system, ensuring menus, pricing, and product information remain accurate.
- Monitor departmental performance, including revenue, labour costs, stock control, and profitability.
- Ensure compliance with food safety, health and hygiene requirements, allergen procedures, and Scottish licensing legislation.
Requirements
- Previous experience as a Restaurant Manager, Assistant Restaurant Manager, or similar senior hospitality professional within a high-quality restaurant or hotel environment.
- Strong leadership skills with experience managing and developing a team.
- Confident leading restaurant service and providing hands-on operational support.
- Experience creating staff rotas and managing holidays and staffing requirements.
- Good commercial understanding of stock control, ordering, gross profit margins, and labour costs.
- Strong guest service and complaint-handling skills.
- Confident using EPOS systems and Microsoft Excel.
- Flexible to work evenings, weekends, and some morning shifts.
- A valid Scottish Personal Licence (SCPL) is highly desirable.
- Experience using Toast POS would be advantageous.
