Maneki Ramen, part of the ART Hospitality Group, is a growing and exciting brand with a passion for delivering authentic, high-quality ramen. We are looking for an experienced, motivated, and hands-on Junior Sous Chef to support the leadership of our Birmingham kitchen.
Key Responsibilities
Kitchen Leadership
- Support the Executive Chef and Sous Chef in the day-to-day running of the kitchen.
- Lead and motivate the kitchen team during service, ensuring smooth operations and high standards are consistently maintained.
- Assist with training, mentoring, and developing junior chefs and kitchen staff.
Food Quality & Consistency
- Maintain exceptional standards of food preparation, presentation, and consistency across every dish.
- Monitor quality control throughout service, ensuring all food meets Maneki Ramen's standards before leaving the kitchen.
- Support menu development, recipe adherence, and continuous improvement initiatives.
Food Safety & Compliance
- Ensure all Food Hygiene, HACCP, and Health & Safety procedures are followed at all times.
- Help maintain a clean, organised, and compliant kitchen environment.
- Assist with stock rotation, waste management, and accurate temperature and safety records.
Operational Excellence
- Support stock control, ordering, and inventory management to minimise waste and maximise profitability.
- Be confident working under pressure in a busy, fast-paced kitchen while maintaining attention to detail.
- Step into a leadership role in the absence of the Sous Chef when required.
What We're Looking For
- Previous experience as a Chef de Partie or Junior Sous Chef in a high-volume kitchen.
- Strong organisational and communication skills.
- A positive attitude with a passion for developing others and leading by example.
- Ability to remain calm and efficient during busy service periods.
- A genuine passion for producing exceptional food and delivering memorable guest experiences.

Additional Information
Knowledge of Japanese cuisine is not essential. Full training will be provided by Pete, our Executive Chef/Director, allowing you to develop specialist skills in Japanese food preparation and culinary techniques.
