Salary: £37-39K salary (based on experience) + tronc (£2-3K per annum)
Hours: Full-time, 5 days in 7 Wednesday – Sunday (rota basis)
Jesmond Dene House are seeking an experienced and passionate Senior Pastry Chef to lead our pastry kitchen team. This is a key leadership role responsible for overseeing all pastry operations across the hotel, ensuring exceptional quality, creativity, and consistency in every dessert and afternoon tea offering. Working closely with the Executive Chef, you will play an integral part in maintaining the high standards and reputation of our kitchen.
The ideal candidate will:
- Have proven experience as a Head/Senior Pastry Chef in a high-volume, high-pressure hotel or restaurant environment
- Be confident leading and developing a pastry team within a busy professional kitchen
- Have a strong passion for high-quality pastry, desserts, baking, chocolate work, and seasonal ingredients
- Demonstrate creativity and innovation in menu development and presentation
- Stay calm under pressure, highly organised, and be a clear communicator
- Be a natural team leader with excellent mentoring and motivational skills, fostering a collaborative and efficient work environment
- Have strong attention to detail and a commitment to consistency and excellence
- Formal culinary qualifications or certifications related to pastry arts are preferred but not essential for highly experienced candidates. This role offers an inspiring environment for passionate pastry chefs eager to advance their careers while delivering exceptional culinary experiences.
Key Responsibilities
- Lead and manage all aspects of the pastry kitchen operation
- Create and develop seasonal dessert menus, afternoon tea offerings, breads, pastries, and specials that align with new industry trends and guest preferences
- Maintain the highest standards of presentation, quality, Health & Safety, and Food Hygiene at all times
- Train, mentor, and develop pastry chefs and junior team members
- Manage stock control, ordering, food costs, and waste reduction within the pastry department
- Ensure consistency and efficiency across all pastry service periods
- Work closely with the Executive Chef on menu planning, costing, GP%, and kitchen reporting
- Liaise with suppliers to source high-quality ingredients and products
- Check all incoming deliveries for quality and consistency
