23 Paul Street is looking for an experienced Cocktail Bar Supervisor to lead our small bar team. This is a hands-on role: you will bartend throughout every shift while maintaining cocktail, stock and service standards. You must be confident with classical cocktails, precise specifications and late-night luxury service.
The venue
23 Paul Street is a high-end adult-entertainment venue in Shoreditch, known for discreet and personal guest service.
The environment is stylish, informal and predominantly female. Applicants must be completely comfortable working professionally and respectfully in an adult-entertainment setting.
The bar can be quiet for periods and then suddenly very busy. This is not a continuously high-volume cocktail bar.
The role
You will be the senior bar person on duty, working alongside a bartender, a barback supervisor and additional bartenders during busier services.
You will report to the duty manager during the shift and to the Head of Operations outside it.
This is an operational cocktail role. Stock control, pouring accuracy and consistent specifications are the main priorities. It is not primarily a creative mixology position.
Occasionally, you may be asked to support private-room hosting during holidays or staffing gaps. This is normally no more than once a month or every couple of months.
What you will be responsible for
- Hands-on cocktail bartending and supervision of the bar team.
- Opening and closing the bar.
- Nightly stock counts using Zonal.
- Improving stock accuracy and reducing underpouring.
- Accurate jigger use and adherence to house specifications.
- Ordering, wastage control and delivery support.
- Batching, garnishes and mise en place.
- Fridge checks, cleaning and hygiene standards.
- Till reconciliation and occasional cash-ups.
- Training and assessing bartenders.
- Maintaining service speed, consistency and attention to detail.
- Updating approved cocktail specifications.
- Developing one or two commercially sensible seasonal cocktails.
Nightly stock counts are checked monthly by an external stock-control company.
What we need
- At least four years’ premium-hospitality experience with strong cocktail-bar experience.
- Previous supervisor, head-bartender or senior-bartender experience.
- Strong classical cocktail knowledge.
- Confidence following exact specifications and using a jigger.
- Experience supervising a small team.
- Good stock-control awareness.
- Fluent English.
- Unrestricted right to work in the UK.
- A reasonably stable employment history.
- Polished presentation and strong personal style.
You must be confident making Margaritas, Mai Tais, Martinis, Negronis and Old Fashioneds. A practical cocktail test will form part of the recruitment process.
An exceptional senior bartender ready for their first formal supervisor role may be considered.
Experience in luxury hotels, members’ clubs, Mayfair venues, premium cocktail bars or high-end nightlife would be useful. Luxury standards matter, but you must also be adaptable, practical and willing to support the wider operation.
Working hours
- Wednesday to Saturday.
- Approximately 6:30pm to 6:30am.
- Four shifts per week.
- Tuesday daytime stocktake once each month.
- Friday and Saturday availability is mandatory.
Finishing at 6:30am is normal. Shifts may occasionally continue later.
This role is not suitable for anyone seeking early finishes or conventional hospitality hours.

The dress code is stylish, professional all-black clothing. Uniform is not supplied. Smart black trainers, visible tattoos and piercings are acceptable where the overall presentation remains polished.
Who should apply
