At Loch Rannoch Hotel and Estate we are recruiting for a hands on Food & Beverage Manager, this role is based working on the floor with the team on a day to day basis supporting both restaurant and bar teams.
Experience is essential as restaurant manager as a minimum, team development is a key factor for this role as is setting standards with the teams.
The Loch Rannoch collection consists of a 2 hotels located in one of the most beautiful and remote areas of Scotland. Our F&B operation includes multiple restaurants.
The role
You will take operational responsibility for the hotel’s F&B department and lead a young, enthusiastic team of around 10 staff members (growing during peak season).
This role requires a visible and confident leader on the floor who sets the standard during service and shares their knowledge and experience.
Key responsibilities include:
- Leading service and stepping in on the floor when needed
- Training and developing a young team with varying hospitality experience
- Creating, implementing and maintaining SOPs to ensure a consistent guest experience
- Managing rotas, staffing levels and team performance
- Managing purchasing, stock levels and supplier relationships to ensure quality and cost control
- Working closely with the Head Chef to ensure strong kitchen–floor communication
- Supporting the growth of the department and increasing covers
We are looking for someone who:
- Leads by example and enjoys being present on the floor
- Stays calm, friendly and solution-focused during busy services
- Has experience managing multi-outlet F&B operations
- Is passionate about hospitality and guest experience
- Enjoys mentoring young team members and helping them grow
- Communicates confidently with both kitchen and front-of-house teams
- Has the confidence to work alongside an experienced Head Chef
