Heydays is a bright, open‑kitchen restaurant on Exmouth’s Sideshore, known for fresh coastal cooking, generous portions, and a relaxed, upbeat atmosphere. From Korean chicken and chilli fries to fresh fish, bowls, burgers, brunch and great coffee, the menu is built around flavour, pace and consistency — and the kitchen is very much part of the guest experience. We’re looking for a Sous Chef who can match that standard: steady, skilled, and proud of the food they put out.
The Role
You’ll work closely with the Head Chef to keep service sharp, prep organised, and the kitchen running with confidence. This is a busy beachfront site with high visibility, so you’ll need to enjoy fast service, clean plates, and a menu that balances crowd‑pleasers with fresh coastal dishes.
What You’ll Be Doing
- Running service with consistency and control
- Delivering the Heydays staples to a high standard: bowls, burgers, fish, Korean chicken, brunch dishes, small plates
- Supporting menu development and seasonal coastal specials
- Managing prep, ordering, stock, and waste with discipline
- Maintaining strong food safety and allergen standards
- Coaching junior chefs and setting the tone for the team
- Stepping up confidently when the Head Chef is off‑site
