The Pointer is looking for an experienced, ambitious Head Chef to take ownership of our kitchen and lead the next chapter of our food offer.
We are a busy country pub with rooms in the heart of Brill, serving modern British food with a strong focus on quality ingredients, seasonality and proper hospitality.
We are looking for much more than someone who can cook.
We want a Head Chef who can lead a team, build a positive kitchen culture, create exciting and commercially sensible menus, maintain high standards and take genuine ownership of the day-to-day running of the kitchen.
The role
As Head Chef, you will have full responsibility for the kitchen operation, working closely with the General Manager to develop the food offer and continue growing the business.
You will be responsible for:
- Creating and developing seasonal modern British menus
- Producing accurate recipes, specifications and dish costings
- Managing food GP, stock levels, ordering and wastage
- Completing and maintaining stock sheets and kitchen controls
- Building strong relationships with suppliers and sourcing quality produce
- Recruiting, developing and retaining a strong kitchen team
- Creating rotas and managing kitchen labour effectively
- Maintaining excellent food quality and consistency across every service
- Ensuring excellent standards of food safety, cleanliness and compliance
- Developing specials, events and new food ideas
- Training and mentoring chefs at all levels
- Working collaboratively with the General Manager and wider management team
- Creating a professional, positive and respectful kitchen environment
Who we're looking for
You may already be an experienced Head Chef, or a very strong Senior Sous Chef ready to take full ownership of a kitchen.
Most importantly, you will be someone who combines creativity with strong organisation and leadership.
You should be:
- Passionate about modern British food and seasonal produce
- Commercially aware and comfortable working with GP, pricing and labour
- Organised and confident managing kitchen systems and administration
- Able to create menus that are exciting but achievable and commercially viable
- A strong leader who gets the best out of people
- Calm and solutions-focused during busy services
- Comfortable holding high standards without creating a negative kitchen culture
- Reliable, accountable and an excellent communicator
- Someone who wants to genuinely put their stamp on a food operation
