The Role
We are seeking an experienced and driven Head Chef to lead our kitchen team and successfully launch and develop a new evening food offering within our busy town centre pub. This is a hands-on leadership role requiring strong culinary skills, commercial awareness, excellent organisational ability, and a passion for delivering consistently high-quality food in a fast-paced environment.
The successful candidate will be responsible for creating and implementing an attractive evening menu, managing kitchen operations, maintaining food safety standards, controlling costs, and developing a high-performing kitchen team.
Key Responsibilities
Menu Development & Food Quality
- Design, develop, and launch a profitable and appealing evening menu.
- Create seasonal specials and promotions to drive customer engagement and repeat business.
- Ensure all dishes are prepared and presented to a consistently high standard.
- Monitor customer feedback and adapt menus accordingly.
- Source quality ingredients while maintaining target food costs.
Kitchen Management
- Lead, motivate, and develop the kitchen team.
- Recruit, train, and mentor kitchen staff as required.
- Create staff rotas to ensure adequate coverage during peak trading periods.
- Manage daily kitchen operations and service delivery.
- Foster a positive, professional, and collaborative working environment.
Key Skills & Experience
Essential
- Previous experience as a Head Chef, Sous Chef, or Senior Chef in a high-volume pub, restaurant, or hospitality venue.
- Proven experience in menu development and food cost management.
- Strong leadership and team management skills.
- Excellent knowledge of food hygiene and safety regulations.
- Ability to work under pressure in a fast-paced environment.
- Strong organisational and time-management skills.
- Flexible approach to working evenings, weekends, and holidays.
Desirable
- Experience launching a new food concept or menu.
- Relevant culinary qualifications.
- Level 3 Food Safety qualification.
- Experience with stock control and kitchen management systems.
