Access Personnel Ltd are currently hiring Fish Filleters on behalf of our leading Seafood client, based in Fraserburgh.
The Fish Filleter is responsible for preparing and processing fish to meet quality standards for retail, wholesale, or foodservice. This role requires precision, speed, and knowledge of proper fish handling and hygiene to ensure safety and product quality.
Key Responsibilities:
- Accurately fillet fish according to size and type specifications.
- Remove bones, skin, and other unwanted parts while minimizing waste.
- Maintain high standards of hygiene and food safety, including proper handling, storage, and cleaning of fish.
- Inspect fish for quality and freshness, reporting any defects or issues.
- Operate knives and other filleting tools safely and efficiently.
- Follow production schedules and complete daily filleting quotas.
- Clean and sanitize workstations, tools, and equipment after use.
Requirements:
- Previous experience in fish processing, seafood handling, or related work preferred (knife skills), however, training can be provided for the right candidate.
- Ability to work standing for long periods and perform repetitive tasks.
- Strong hand-eye coordination and knife skills.
- Knowledge of food safety and hygiene standards.
- Physical stamina and attention to detail.
- Ability to work in a cold, wet, or refrigerated environment.
Rate of pay is structured under a 'Piece Work Rate' (per stone/kg filleted). Depending on skill level, candidates can earn a large amount. Rates are competitive.
Shifts: Monday - Friday, 6am - 3pm/4pm. 6am-12pm Saturdays (if required)
