We’re looking for an experienced Chef to join us at The Ram Inn in Brundall.
I took over the Ram around four months ago and we’ve been building the pub, the food and our reputation ever since. I’m really proud of what we’re creating here. We’re not trying to be fine dining and I don’t want a kitchen full of bought-in, low-quality pub food either. I want us to be a proper local pub that happens to serve really good food, made properly, at sensible prices.
Our kitchen is relatively small and normally operates with one or two people, so I need someone who is confident, organised and experienced enough to take responsibility rather than needing constant direction. Some services can be quiet and others can suddenly get very busy, so you need to be comfortable working independently and keeping your head when the orders come in.
What you'll be doing
- Preparing and cooking fresh, good-quality pub food consistently
- Taking responsibility for the kitchen during your shifts
- Keeping prep, stock and ordering organised
- Maintaining excellent food hygiene, cleaning and safety standards
- Managing food waste, portion control and helping us protect our margins
- Making sure dishes leave the kitchen looking and tasting as they should
- Helping train and support other members of the kitchen team
- Working with me on specials, new dishes and developing the menu
- Making sure the kitchen is properly prepared before service rather than firefighting once we're busy
What I'm looking for
Experience matters for this role. You need to be comfortable working with fresh meat, fish and vegetables, making sauces, preparing joints, cooking roasts and doing the basics properly.
I’m looking for somebody who takes pride in their kitchen and notices when something isn’t right. Someone who understands that running a good kitchen isn't just about being able to cook. Stock control, cleanliness, prep, organisation, consistency and communication are just as important.
There’s plenty of opportunity to put your own ideas forward and help develop what we do, but I’m not looking for somebody to come in and completely reinvent the Ram. I have a clear idea of the kind of pub and food offering I want to build, and I want a chef who is excited about helping me make it better.
Most importantly, I want somebody reliable who genuinely cares about the food they send out. We’re still a relatively new business and our reputation is being built one customer and one plate at a time.
