About Us:
Newhall Mains is a 5* hotel situated in the heart of the Scottish Highlands. The premises consist of a series of luxury cottages and suites. With its own private airfield, restaurant, whisky bar and unrivalled approach to detail, we are in the process of building out one of the country’s leading hospitality businesses.
The Role:
We are looking for an experienced Bartender to take ownership of our bar and drinks offering, bringing creativity, craft and genuine warmth to every guest interaction.
As our Bartender, you will be a central part of the guest experience — whether hosting at the whisky bar, crafting cocktails for a private dining event, or recommending the perfect dram to a curious guest. You will work closely with the Restaurant Manager and front-of-house team to deliver a seamless, memorable experience from first drink to last.
The Ideal Candidate:
An experienced bartender with a genuine passion for spirits, wine, and considered drinks — particularly Scotch whisky, given our setting and identity.
Confident, personable, and instinctively hospitable — someone who can hold court behind the bar, make guests feel at ease, and turn a drink into a moment.
Creative and knowledgeable, with the ability to develop and evolve a drinks menu that reflects the seasons, the landscape, and the quality of our food offering.
Organised and efficient under pressure, with an understanding of stock management, wastage, and the commercial side of running a bar.
Key Responsibilities
- Deliver exceptional bar service across the restaurant, whisky bar, and private dining and events.
- Develop and maintain a drinks menu that complements the food offering and reflects the best of Scottish produce and beyond.
- Manage stock levels, ordering, and cellar organisation in coordination with the Restaurant Manager.
- Ensure the bar area is immaculately presented and fully prepared for each service.
- Build genuine relationships with guests, offering thoughtful recommendations and creating a bar experience that keeps people coming back.
- Support the wider front-of-house team during service as required.
What we can offer you:
- £16 per hour + tips.
- Development opportunities, responsibility, and genuine room to grow — including building out the bar programme as the business expands.
- Be part of a young and ambitious team working toward becoming one of Scotland's leading hospitality destinations.
- The opportunity to put your stamp on a drinks offering at a Michelin Key recognised restaurant.
- Opportunity to assist and partake in off-site guest activities including guided walks, foraging, e-bike tours, beach picnics, and more.
