Overview
Following the lead of the head chef, a cook will prepare and produce a variety of foods from cook-to-order-toasties, to preparing more complex dishes like traditional and international classics to be served later. They should have the ability to both follow instructions and lead food production within a small team. They should also have the knowledge to work safely within EHO and safety legislation and follow company procedures.
Task examples
- Support daily kitchen prep and service, maintaining pace, quality and consistency across the menu.
- Maintain high standards of food quality, portion control, presentation and speed of service.
- Work closely with FOH to ensure clear communication, smooth service, and a positive customer experience.
- Maintain exemplary kitchen hygiene and organisation at all times.
- Ensure compliance with food safety legislation and best practice (HACCP principles, allergens, cross-contamination control, traceability, and cleaning regimes).
- Champion consistent systems: date labelling, FIFO rotation, temperature control, and safe storage.
- Help train and mentor junior staff in prep standards, station setup, service discipline, and food safety practices.
Skills and experience
Essential:
- Proven experience as a cook in a commercial kitchen (restaurant, café, pub, or similar).
- Strong practical knowledge of food preparation, cooking methods, and service execution.
- Good understanding of food hygiene, allergens and kitchen safety requirements.
- Confident communicator; able to work closely with FOH and management.
- Organised, consistent and reliable, with pride in cleanliness and standards.
Desirable:
- Experience stepping up to lead service.
- Level 3 Food Safety (or willingness to complete quickly).
- Experience with stock control, ordering systems and waste reduction.
- Computer literate with able to use computer based ordering and hygiene recording systems.
