We're looking for a talented Sous Chef to join our team at The Milbank Arms.
We're a busy, independent country pub serving modern British food, with a focus on seasonal cooking and great local ingredients. Being surrounded by some fantastic farms and neighbouring moors means we have access to excellent meat and game throughout the year, and we like our menus to reflect what's available each season.
Our customers are a mix of local regulars, shoot parties throughout the season, and destination visitors who travel to dine and stay with us. We pride ourselves on delivering consistently high-quality food and warm hospitality.
We're looking for someone who enjoys cooking good food without overcomplicating it, has plenty of ideas, and wants to play a genuine part in developing our menus.
What you'll be doing
- Working alongside the Head Chef to run the kitchen day to day.
- Helping create seasonal menus and changing specials.
- Cooking with fresh local ingredients, including game from neighbouring estates and meat from local farms.
- Maintaining high standards of food quality, consistency and presentation.
- Ensuring food hygiene and food safety standards are maintained at all times.
- Following all HACCP procedures and kitchen compliance requirements.
- Supporting and developing junior members of the team.
- Managing stock and helping to reduce waste.
- Leading the kitchen when the Head Chef is away.
What we're looking for
- Experience as a Sous Chef or a strong Junior Sous Chef ready for the next step.
- Level 2 Food Hygiene Certificate as a minimum
- A good understanding of food safety, HACCP and allergen management.
- A passion for seasonal food and quality ingredients.
- Someone who enjoys being creative and contributing ideas.
- Good organisational and communication skills.
- A positive attitude and the ability to stay calm under pressure.
- Pride in producing consistently good food while maintaining a clean, organised and compliant kitchen.
