Poulet is looking for an experienced and enthusiastic General Manager to join our team in Bermondsey.
Located in a beautiful 3,000 sq ft railway arch on Maltby Street, Poulet is a rotisserie restaurant and vibrant bar with a strong local following. Our venue stretches from Maltby Street through to Druid Street and offers a lively, welcoming atmosphere with great food, exceptional cocktails, organic and classic wines, local beers, ciders, ambient lighting, and music.
We welcome up to 150 guests and host a wide range of events, including live music nights, game nights, weddings, private parties, and corporate events. This is a fantastic opportunity for a hands-on hospitality professional who enjoys leading a team, creating great guest experiences, and being part of a growing destination venue.
You will work closely with our fantastic Assistant General Manager, supervisors, operations team, and owner to ensure the smooth running of the business and to help drive continued success.
What you’ll be doing
As General Manager, you will be responsible for overseeing the day-to-day running of the restaurant and bar, including:
Managing daily operations across the venue
Leading, motivating, and supporting the front-of-house team
Creating a warm, professional, and high-quality guest experience
Managing staff scheduling, stock control, and service standards
Ensuring health and safety, hygiene, and licensing compliance
Supporting recruitment, training, and development of team members
Working with the operations team and owner on revenue-building strategies
Handling customer feedback, inquiries, and complaints professionally
Helping plan, organise, and deliver events alongside the operations team
Maintaining a positive, organised, and energetic working environment
What we’re looking for
We are looking for someone with strong hospitality leadership experience and a genuine passion for food, drink, service, and people.
The ideal candidate will have:
At least 3 years’ experience in hospitality management
Strong leadership, communication, and interpersonal skills
The ability to motivate, train, and develop a team
Excellent organisational and delegation skills
A hands-on approach and calmness under pressure
A strong focus on customer service and guest satisfaction
Good wine knowledge, which would be an advantage
Flexibility to work evenings, weekends, and holidays
Fluent English
The right to work in the United Kingdom

Competitive salary of £40,000–£52,000, including service charge
