We are seeking an exceptional Executive Head Chef to lead this journey.
The Role
This is not a standard Head Chef position.
We are looking for an inspirational culinary leader capable of creating one of the finest Indian dining experiences in Europe. You will have complete responsibility for the culinary direction of the restaurant, leading a talented brigade and setting the highest possible standards across every aspect of the kitchen.
The successful candidate will combine traditional Indian culinary heritage with modern fine dining techniques, creativity, precision and innovation.
Key Responsibilities
- Lead, inspire and develop a high-performing kitchen brigade.
- Design and execute an exceptional seasonal tasting menu alongside an à la carte offering.
- Create innovative dishes while respecting authentic regional Indian flavours.
- Deliver consistently outstanding food presentation to Michelin-level standards.
- Develop recipes, specifications and standard operating procedures for every dish.
- Source the finest British and international ingredients.
- Build relationships with premium suppliers and artisan producers.
- Maintain absolute consistency in every service.
- Oversee all food preparation, production and quality control.
- Ensure the highest standards of cleanliness, organisation and kitchen discipline.
- Implement rigorous food safety, HACCP and health & safety procedures.
- Recruit, mentor and develop future culinary talent.
- Manage labour scheduling, stock control and food cost performance.
- Collaborate closely with the Restaurant Director and senior management on the overall culinary vision.
- Continuously research emerging culinary trends and techniques while maintaining the restaurant's identity.
Essential Requirements
Applicants must possess significant experience within elite luxury Indian restaurants.
We are particularly interested in chefs who have held senior positions within establishments such as:
- Madhu's
- Gymkhana
- Trishna
- Benares
- Jamavar
- Veeraswamy
- Kutir
- Quilon
- Opheem
- Other Michelin-starred or internationally recognised Indian fine dining restaurants
Experience within luxury five-star hotels or Michelin-starred kitchens is also highly desirable.
Essential Experience
- Minimum 10 years' professional culinary experience.
- Minimum 5 years in a Head Chef or Executive Chef leadership role.
- Proven experience leading large professional kitchen brigades.
- Extensive knowledge of regional Indian cuisines.
- Fine dining and tasting menu experience.
- Strong understanding of classical and modern cooking techniques.
- Experience in menu engineering and recipe development.
- Excellent financial awareness including GP, food cost and labour management.
- Experience recruiting, mentoring and developing high-performing culinary teams.
- Strong supplier and procurement management experience.
- Comprehensive understanding of HACCP and UK food safety legislation.
