The Role
As General Manager, you will take full P&L ownership of the Canary Wharf flagship. You will be the driving force behind guest experience, front-of-house service execution, team leadership, financial performance, and compliance. You will work directly alongside the Founder/CEO and senior management to shape service culture and execute high-profile brand activations, bar takeovers, and corporate events.
Key Responsibilities
1. Operational & Service Excellence
- Lead daily front-of-house (FOH) and back-of-house (BOH) operations, ensuring seamless service during high-volume lunch and dinner shifts.
- Enforce flawless service standards, ensuring guests are properly guided through our menu concept (short-eats, prawn pairings, and signature cocktail offerings).
- Maintain exceptional food safety, health and safety, and hygiene standards across all restaurant operations.
2. Financial & Business Management
- Take full accountability for the restaurant’s P&L, managing budgets, labor costs, waste, and direct gross margins.
- Drive top-line revenue through local corporate outreach, private dining bookings, and upselling strategies.
- Manage stock control, inventory auditing, and supplier relationships in alignment with central procurement.
3. Team Leadership & Culture
- Recruit, onboard, train, and mentor a high-performing FOH team, fostering a supportive, fast-paced team culture.
- Conduct continuous menu, cocktail, and UK allergen-compliance training for service staff.
- Set clear KPIs, conduct regular performance reviews, and build robust shift rosters aligned with business demand.
4. Guest Experience & Brand Loyalty
- Act as the floor presence and face of ISSO, building strong relationships with local corporate clients and regular diners.
- Proactively manage guest feedback, floor resolution, and review channel responses with absolute professionalism.
- Oversee seamless execution of PR events, guest chef collaborations, and high-profile cocktail takeovers.
Requirements & Qualifications
- Experience: 3+ years as a General Manager or Senior Assistant GM in a premium, high-volume London restaurant or cocktail venue (Canary Wharf / City of London experience preferred).
- Leadership: Proven track record of managing, motivating, and developing FOH and BOH teams.
- Financial Acumen: Strong understanding of restaurant financials, P&L management, margin targets, and labor cost optimization.
- Knowledge: Comprehensive knowledge of UK health & safety regulations, licensing laws, and the 14 major allergen management standards.
- Mindset: Entrepreneurial, proactive, highly organized, and obsessed with detail and guest satisfaction.
