With 6 thriving locations across London, we're a fast-growing brand with real momentum — and we're now bringing Bobo & Wild to St Albans, opening soon inside the Encourt Padel & Wellness.
This is an exciting time to join. You won't just be joining a restaurant — you'll be part of building something from the ground up in a new location, with the backing of an established and growing brand behind you.
The Role
This isn't a back-office role. We need someone who is behind the bar, in the mix, leading by example every shift. You'll take full ownership of the bar — from crafting exceptional drinks to building a team that delivers consistently high standards. If you're the type who takes pride in a perfectly made cocktail and a well-run operation, this is your role.
What We're Looking For
- Minimum 2–3 years experience in a bar management or senior bar role
- Strong knowledge across cocktails, wines, and beers
- Confident in creating and developing drinks menus
- Experience with stock management, ordering, and cost control
- Proven ability to train, develop, and motivate a bar team
- Hands-on mentality — comfortable working the bar alongside your team
- Takes initiative, solves problems, and owns their space
- Experience with hiring and performance management a plus
- High standards, positive energy, and genuine passion for hospitality
What You'll Be Doing
- Running the bar operation day-to-day to a high standard
- Crafting and serving cocktails, wines, and beers with consistency and flair
- Developing and updating the drinks menu seasonally
- Managing stock — ordering, receiving, controlling wastage and cost
- Training and upskilling the bar team on products, techniques and service
- Maintaining quality control across every drink that leaves the bar
- Supporting with the hiring bar staff when needed
- Collaborating with the wider Bobo & Wild team on events and service flow
- Ensuring hygiene, compliance, and licensing standards are always met
What We Offer
- Salary: range of £32,000- £35,000 yearly, depending on the experience.
