Location: Tavern on the Bay
Hours: 40 hours per week over 4 days (including evenings, weekends, and bank holidays as required)

Job Summary:
Tavern on the Bay is seeking an experienced, passionate, and reliable Chef de Partie to join our kitchen team. The successful candidate will be responsible for managing a designated section of the kitchen, ensuring consistently high standards of food preparation, presentation, hygiene, and service. This role requires excellent organisational skills, attention to detail, and the ability to perform efficiently in a busy kitchen environment.
Key Responsibilities:
- Prepare, cook, and present dishes to the highest standard in line with Tavern on the Bay's recipes and specifications.
- Take responsibility for a designated kitchen section and ensure it operates efficiently during service.
- Assist the Head Chef and Sous Chef with daily food preparation and service.
- Ensure all food is prepared and served in accordance with food safety and hygiene regulations.
- Monitor food quality, freshness, and portion control to minimise waste.
- Maintain high standards of cleanliness and organisation throughout the kitchen.
- Ensure stock is rotated correctly using the FIFO (First In, First Out) system.
- Report stock shortages and assist with stock ordering and stock takes.
- Help train, support, and mentor junior kitchen staff where required.
- Ensure equipment is used safely and report any maintenance issues promptly.
- Work collaboratively with the kitchen team to deliver excellent service during busy periods.
- Assist in menu development by contributing ideas for new dishes and seasonal specials.
- Follow all company policies and procedures, including health and safety requirements.
- Maintain a professional appearance and positive attitude at all times.
Duties:
- Set up and prepare your kitchen section before each service.
- Cook dishes during lunch and dinner service to agreed standards.
- Ensure all mise en place is completed before service begins.
- Check deliveries and ensure ingredients meet quality standards.
- Label, date, and store food correctly.
- Maintain accurate temperature records and food safety documentation.
- Clean kitchen equipment and workstations throughout and after service.
- Assist with deep cleaning schedules.
- Communicate effectively with front-of-house staff to ensure smooth service.
- Cover other kitchen sections when required.
- Attend staff meetings and training sessions.
Essential Requirements:
- Previous experience as a Chef de Partie or experienced Commis Chef in a busy kitchen.
- Strong knowledge of food preparation techniques.
- Good understanding of food hygiene regulations and HACCP principles.
- Ability to work calmly under pressure.
- Excellent time management and organisational skills.
- Strong communication and teamwork skills.
- Flexible approach to working hours, including evenings, weekends, and public holidays.
- A passion for producing high-quality food.
Desirable:
- Level 2 Food Hygiene Certificate (or willingness to obtain).
- Experience working in a high-volume restaurant environment.
- Knowledge of stock control and ordering procedures.
Working Hours:
- 40 hours per week.
- Worked over 4 days per week.
- Shift patterns will vary according to business needs and may include split shifts, evenings, weekends, and bank holidays.
