Role Overview
Breakfast is one of the most important moments in the guest journey at JA Mar Hall. It is an opportunity to set the tone for the day and demonstrate the quality, warmth and attention to detail that defines the resort.
As Breakfast Chef, you will play an important role in delivering a consistently exceptional breakfast experience for resort guests, working within a larger and more complex Food Beverage operation that includes the Gallery, Dining Room, Clubhouse, events and banqueting.
This is a hands-on culinary role for a chef who takes genuine pride in their craft, understands the importance of consistency and enjoys working as part of a professional hotel brigade.
Working closely with the Executive Chef, wider Kitchen leadership, Breakfast Manager and Food Beverage team, you will ensure breakfast preparation and service are delivered efficiently, safely and to the high standards expected of JA Mar Hall.
Key responsibilities of the Breakfast Chef:
Culinary Responsibilities
- Prepare, cook and present breakfast dishes to consistently high culinary standards.
- Ensure all food leaving the kitchen is prepared with care, attention to detail and pride.
- Support the delivery of the resort’s breakfast offering, including buffet and cooked-to-order elements.
- Ensure all breakfast mise en place is prepared correctly and ready for service.
- Maintain consistency in flavour, quality, portion control and presentation.
- Respond professionally to guest requests and dietary requirements.
- Work with the senior culinary team to continuously improve the breakfast offering.
- Support the Executive Chef’s vision for the culinary development of JA Mar Hall.
- Maintain excellent knowledge of ingredients, preparation methods and cooking techniques.
Breakfast Service Excellence
- Work closely with the Breakfast Manager and Food Beverage team to ensure a seamless breakfast operation.
- Ensure the kitchen is fully prepared before service begins.
- Maintain clear communication with Front of House throughout service.
- Respond quickly and positively to guest requests and changes in demand.
- Ensure replenishment of buffet items is timely and presented to the required standard.
- Support the delivery of special occasions, VIP breakfasts and other guest requirements.
- Understand the importance of breakfast as a key part of the overall resort experience.
Operational Excellence
- Take responsibility for your allocated duties during breakfast preparation and service.
- Maintain a clean, organised and professional working environment.
- Ensure correct storage, labelling and rotation of food products.
- Support stock control, preparation planning and waste reduction.
- Follow all recipes, specifications and kitchen procedures.
- Assist with deliveries and appropriate storage of goods when required.
- Ensure equipment is used safely and maintained appropriately.
- Complete all required cleaning and close-down duties.
- Support the wider Kitchen team during busy periods, events and other operational requirements.
Food Safety Compliance
- Maintain full compliance with food safety legislation and JA Resorts Hotels procedures.
- Follow HACCP requirements and all relevant food safety controls.
- Maintain a strong understanding of allergens and dietary requirements.
- Ensure food is stored, prepared and handled safely at all times.
- Maintain high standards of personal hygiene.
- Complete required cleaning schedules and records accurately.
- Report any food safety, equipment or health and safety concerns immediately.
Guest Experience
- Understand that every plate contributes to the overall guest experience.
- Take pride in delivering breakfast that guests remember positively.
- Ensure special requests and dietary requirements are handled with care and professionalism.
- Work collaboratively with Front of House colleagues to ensure guest expectations are exceeded.
- Recognise that the standards delivered behind the scenes directly influence the guest-facing experience.
- Support the resort’s journey towards Forbes Travel Guide standards through consistency, presentation and attention to detail.

- Support effective portion control and minimise waste.
- Use ingredients efficiently and responsibly.
- Support correct stock rotation and storage.
- Understand that maintaining quality also requires strong commercial awareness.
- Contribute to an efficient kitchen operation without compromising guest experience or culinary standards.
About You
- Previous experience as a Breakfast Chef, Chef de Partie or similar role within a quality hotel, restaurant or hospitality environment.
- Strong practical culinary skills and a genuine passion for food.
- Experience working within a busy breakfast operation would be advantageous.
- Good understanding of food safety, allergens and kitchen hygiene.
- Strong attention to detail and pride in presentation.
- Ability to work calmly and efficiently during busy service periods.
- Reliable, organised and professional in approach.
- A positive team player who enjoys working collaboratively.
- A willingness to learn, develop and continually improve.
- Experience within a four or five-star hotel or luxury resort would be advantageous.
- Knowledge or experience of Forbes Travel Guide standards would be advantageous but is not essential.
