Role Summary and Main Purpose
The Chef de Partie will independently run an allocated kitchen section during preparation and service, ensuring high standards of food quality, presentation, cleanliness and food safety.
The role will support the Head Chef and wider kitchen team with menu development, stock management, food cost control, training and continuous improvement. Given the size of the kitchen brigade, the Chef de Partie will also undertake additional senior responsibilities when required, supporting the Head Chef and maintaining kitchen standards in their absence.
Kitchen Operation and Food Style
Combe Grove offers simple, high-quality British food, with a strong focus on seasonal produce from our own kitchen garden and British-sourced ingredients wherever possible. Our menus support our metabolic health philosophy, with an emphasis on quality protein, vegetables and healthy fats, while being naturally lower in carbohydrates and refined sugar. Food is fresh, nutritious and simply presented, with the kitchen catering for retreat guests, overnight guests, members and private events, including a range of dietary and allergen requirements
Principle Duties and Responsibilities
· Independently run an allocated kitchen section during preparation and service.
· Prepare, cook and present food consistently to the required standards, following agreed recipes, specifications and portion controls.
· Maintain high standards of cleanliness, organisation and presentation across the kitchen and allocated section.
· Assist with menu development, specials, recipe development and costing.
· Contribute ideas to improve food quality, efficiency and the overall kitchen operation.
· Support stock management, including stock rotation, stock checks and ordering.
· Produce weekly stock orders when required.
· Support food cost control, monitor food gross profit and highlight concerns to the Head Chef.
· Support initiatives to control costs, minimise waste and improve the efficient use of ingredients.
· Supervise and support junior kitchen team members and assist with the induction and training of new team members.
· Coordinate kitchen service during quieter periods and provide effective support during busy services.
· Support the implementation of new menus, systems, procedures and Standard Operating Procedures.
· Assist with rota planning and contribute to effective labour management and workforce efficiency.
· Communicate effectively with the kitchen and wider team to ensure smooth and efficient service.
· Identify and respond promptly to operational issues, escalating matters to the Head Chef or appropriate manager where required.
· Maintain agreed kitchen standards and support the Head Chef in their absence.
· Work collaboratively with the wider Food & Beverage team to provide a high standard of service to guests, members and visitors.
· Contribute positively to the culture, teamwork and performance of the kitchen brigade.
· Carry out all duties in accordance with Combe Grove policies, procedures and values.
Food Safety and Hygiene
· Comply with all food safety, hygiene and HACCP requirements and relevant legislation.
· Ensure food is stored, prepared, cooked and served safely.
· Complete required food safety, temperature and HACCP records accurately.
· Maintain high standards of personal hygiene, kitchen cleanliness and equipment safety.
· Report hazards, defects, equipment faults or food safety concerns promptly.
· Participate in all required statutory, mandatory and food safety training.
General Requirements

· Ensure the wellbeing and personal comfort of guests, members and visitors by providing the highest standard of care and service.
· Comply with all Combe Grove policies and procedures.

· Undertake any other reasonable duties consistent with the responsibilities and level of the role.
Pay: £30,000.00 per year
