BAR MANAGER — TEMPLE LANE
Location: Temple Lane
Reports to: Operations Director / Owner
Contract: Permanent, averaging 24 hours per week
Pay: From £14 per hour, plus tronc/service charge where applicable
ABOUT THE ROLE
Temple Lane is looking for a Bar Manager to oversee the day-to-day running of the venue. This is a hands-on, floor-based role — you'll be behind the bar leading service. We have systems in place for bookings, rotas, stock and ordering, so the admin side is light and straightforward. Your focus is on service, standards and the team.
A strong cocktail background is essential. You'll be responsible for the quality and consistency of everything that leaves the bar, and for training the team to deliver it night after night.
WORKING PATTERN
Every Friday and Saturday is a required working day. Beyond that, hours vary week to week depending on trade and bookings:
- Sunday daytimes are frequently required, as we regularly take daytime bookings
- Weekday evenings are required as needed, depending on events and bookings in the diary
Flexibility is essential for this role. Shifts are not fixed outside of Friday and Saturday, and rotas are built around the bookings in the diary. Please only apply if you are genuinely able to work to a varied pattern including weekends, Sunday daytimes and weekday evenings.
DAY-TO-DAY RUNNING
- Open and close the venue, ensuring it is set up correctly and left secure and clean
- Lead from the front during service, working behind the bar and managing the floor through busy periods
- Maintain standards of cleanliness, presentation and ambience at all times
- Resolve customer issues quickly and professionally
- Ensure compliance with licensing law, health and safety and age verification (Challenge 25)
- Flag maintenance issues and incidents to senior management
BOOKINGS
- Keep on top of the reservations diary, including group bookings and private hire
- Respond to booking enquiries promptly
- Confirm requirements, pre-orders and timings ahead of larger bookings
ROTA PLANNING
- Build and publish weekly rotas in advance, matching staffing to expected trade
- Manage holidays, absence and shift cover
- Keep labour in line with budget
STAFF TRAINING AND DEVELOPMENT
- Induct and train new team members
- Deliver ongoing training on cocktail specs, spirit and wine knowledge and service standards
- Build a positive, professional team culture with low turnover
STOCK AND DRINKS
- Place regular orders across spirits, beer, wine, soft drinks and dry goods
- Carry out stocktakes and flag variances
- Protect gross profit through correct measures, portion control and wastage control
- Oversee deliveries, rotation and correct storage
- Input into cocktail and drinks menu development, including seasonal changes and specials
WHAT WE'RE LOOKING FOR
Essential:
- Proven experience as a Bar Manager, Assistant Manager or Head Bartender in a busy, quality-focused bar
- Strong cocktail skills — speed, technique, spec discipline and a genuine interest in the category
- Happy working behind the bar for the majority of your shift
- Full flexibility across Friday and Saturday nights, Sunday daytimes and weekday evenings
- Confident leading, motivating and training a team on the floor
- Commercially aware, with an understanding of stock, GP and wastage
- Comfortable picking up EPOS, booking and rota systems
- Personal Licence holder, or willing to obtain one
Desirable:
- Experience running or supporting events and private hire
- Wine and spirits qualifications (WSET or similar)
- Experience opening a new site or launching a new menu
- Food hygiene and first aid certification
