Assistant Manager – Wine Bar

Little Loaf is opening an exciting new chapter.
Alongside our neighbourhood café, we're expanding into evenings with a relaxed wine bar celebrating great wine, local food and genuine hospitality. Expect thoughtful low-intervention wines, excellent craft beer, seasonal spritzes, simple cocktails, and beautiful British cheese and charcuterie served in a space that's warm, welcoming and distinctly Bristol.
We're looking for an Assistant Manager to help bring that vision to life.
Working closely with the General Manager, you'll help shape the culture, standards and guest experience from day one. This is more than running shifts – it's an opportunity to build a neighbourhood destination where people return week after week because they love the atmosphere as much as what's in the glass.
About you
We're looking for someone with previous management or supervisory experience in hospitality and a genuine passion for wine and great service.
You might currently work in a wine bar, restaurant, bottle shop or hospitality venue with a strong drinks programme. Formal wine qualifications are welcomed but aren't essential – curiosity, enthusiasm and a desire to keep learning matter just as much.
You'll bring:
- At least two years' experience in hospitality management or supervision
- A passion for wine, craft beer and thoughtful hospitality
- Excellent leadership and communication skills
- Confidence running busy services while remaining calm and organised
- Experience leading, training and motivating teams
- Strong attention to detail and pride in creating exceptional guest experiences
- A proactive attitude and enthusiasm for helping shape a growing independent business
The role
Working alongside the General Manager, you'll help lead every aspect of the evening operation, including:
- Running exceptional evening service and leading shifts
- Delivering warm, knowledgeable and relaxed hospitality
- Helping develop a team with genuine enthusiasm for wine and service
- Supporting staff training around wine, beer and our food offering
- Opening, closing and cash handling
- Managing stock, ordering and stock control
- Maintaining excellent standards of cleanliness, food safety and health & safety
- Monitoring labour costs and supporting site KPIs
- Working closely with the bakery, kitchen and wider Bristol Loaf team
- Building lasting relationships with our regular guests and local community
You'll also
- Be the General Manager's right hand and confidently run the venue in their absence
- Help curate an outstanding drinks experience centred around low-intervention wines, local producers and seasonal serves
- Champion quality across every part of the guest experience, from the welcome at the door to the final glass of wine
- Bring ideas, creativity and initiative as we continue to grow and evolve
