Bakery Café Manager & Specialty Coffee Lead
Help make Bread Bin part of Hale's everyday.
We're opening a new artisan bakery café in the heart of Hale Village and looking for an experienced, hands-on manager to lead our front-of-house team and take ownership of our specialty-coffee offering.
You'll set the coffee standards, ensuring every drink complements the quality of the food we produce. We want every customer to receive such a warm welcome — and such consistently excellent food, coffee and service — that visiting Bread Bin becomes an essential part of their day.
What you'll be doing
- Leading the day-to-day front-of-house operation and allocating responsibilities across the team.
-Opening and closing the premises as key-holder, preparing the café for service and securing it at the end of the day.
- Managing till procedures, cash handling and cashing up.
-Delivering warm, personal service and building the team's product knowledge so they can talk confidently about ingredients and methods.
-Managing the counter and displays so our sourdough and viennoiserie are shown at their best — maximising freshness and sales while minimising waste.
-Taking the lead on coffee quality: dialling in each morning, holding extraction standards and making consistently excellent espresso-based drinks.
-Training, supporting and motivating the front-of-house team, and setting the standard for food, coffee, presentation and service.
-Organising staff rotas and maintaining accurate records of hours worked.
-Monitoring coffee, milk, packaging and front-of-house supplies and ordering them in good time.
-Using Square sales data to spot trends, plan product quantities and reduce waste.
-Keeping daily wastage, food-safety and temperature records, and feeding customer insight back to the bakery team.
About you
-Previous management experience in a bakery café, independent café or similar hospitality setting.
-Strong hands-on experience in an independent specialty-coffee environment, using a manual espresso machine.
-Excellent knowledge of espresso extraction, grinder adjustment and milk texturing, with confident latte-art skills.
-The ability to train others and hold consistent coffee standards.
-Reliable, and happy to work early starts and weekends.
-Excellent customer-service and communication skills, with a natural ability to welcome people and build relationships.
-The confidence to lead a team while remaining fully involved in daily service.
-Strong organisational skills across rotas, stock, cash and daily records.
-A good understanding of food safety, hygiene and allergen procedures.
-A genuine passion for artisan food, sourdough bread and high-quality viennoiserie.
What we offer
Salary of £30,000–£32,000 per year, depending on experience.
20 days' holiday plus bank holidays.

The practical details
Permanent, full-time, 36–40 hours per week, with exact hours negotiable. We open Tuesday to Sunday, so the role involves regular weekend working and early starts, normally around 6.30–7.00am.
The top of the salary range is for candidates who bring both proven management experience and strong specialty-coffee expertise.
