We are looking for an experienced and passionate Senior Sous Chef to support the Head Chef in delivering exceptional food and leading a high-performing kitchen team. This is a hands-on leadership role in a busy, premium country pub where quality, consistency, and outstanding guest experiences are at the heart of everything we do.
The successful candidate will be an inspiring leader with excellent culinary skills, a strong understanding of fresh food operations, and the ability to maintain the highest standards in food quality, hygiene, and kitchen performance.
Key Responsibilities - Kitchen Leadership
- Support the Head Chef in the day-to-day management of the kitchen.
- Lead, motivate, and develop the kitchen brigade, creating a positive and professional working environment.
- Supervise service to ensure dishes are delivered consistently to specification.
- Act as the senior kitchen leader in the Head Chef's absence.
Food Quality
- Prepare and present high-quality dishes using fresh, seasonal ingredients.
- Ensure consistency in flavour, presentation, and portion control.
- Maintain exceptional standards of cleanliness and food safety.
- Monitor quality throughout preparation and service.
Team Development
- Train, coach, and mentor junior chefs and kitchen assistants.
- Conduct regular skills development and support succession planning.
- Promote teamwork, accountability, and high performance.
Kitchen Operations
- Assist with stock ordering, stock control, and supplier management.
- Minimise waste and maximise gross profit through effective kitchen management.
- Support menu development, seasonal specials, and new dish creation.
- Ensure equipment is maintained and reported where repairs are required.
Compliance
- Ensure compliance with all Food Safety, HACCP, COSHH, allergen, and health & safety legislation.
- Maintain accurate kitchen records and due diligence documentation.
- Lead by example in maintaining safe working practices.
Skills & Experience
- Previous experience as a Sous Chef or Senior Sous Chef within a premium pub, hotel, or restaurant.
- Strong fresh food background with excellent cooking skills.
- Proven ability to lead and motivate kitchen teams.
- Experience managing busy services while maintaining quality standards.
- Excellent organisational and communication skills.
- Good commercial awareness with experience controlling labour and food costs.
- Food Safety Level 2 or 3 qualification (preferred).

Pay: £38,000.00-£42,000.00 per year
