Sommelier – Mayfair | Late-Night Fine Dining | £45,000
Zeta Thomas are recruiting on behalf of one of Mayfair's most talked-about late-night addresses, part of a group operating at the same calibre as Novikov, Nobu, and Sexy Fish. We're recruiting an experienced Sommelier to join a Front of House team drawn from exactly that world.
£45,000 base plus tronc — realistic total earnings well above base for the right candidate.
This is a role for someone who fits the room as much as the wine list, great palate, natural confidence with guests, comfortable with a proper late-night pace, and genuinely happy working as part of a strong team rather than running the programme solo.

What We're Looking For
- WSET Level 3 (minimum)
- Proven experience in a high-end, high-volume restaurant
- Strong wine knowledge and a genuinely great palate
- Confident, natural guest interaction, this is front of house as much as technical
- Comfortable with late-night service, shifts vary, spanning roughly midday through to 1am
- Team-first approach
