Panoramic 34 is one of Liverpool's most celebrated fine-dining destinations, as famous for its breathtaking views across the city, the River Mersey and the Welsh hills as it is for its refined, seasonally driven cooking. Every plate that leaves our pass is expected to match the setting: precise, elegant and memorable.
We are now looking for an exceptional Senior Sous Chef to help lead our kitchen brigade and uphold the standards our guests travel for.
Job Overview
As Senior Sous Chef, you will be the Head Chef's right hand in running services, driving consistency across every section, and mentoring the team to deliver food at the highest level. You will play a central part in menu development, supplier relationships and maintaining the discipline and creativity that define a kitchen of this calibre.
Responsibilities
- Leading and coordinating the brigade during service, ensuring flawless execution and timing
- Deputising for the Head Chef in their absence and taking full ownership of the kitchen
- Maintaining exceptional standards of consistency, presentation and quality on every plate
- Contributing to menu design, seasonal changes and dish development
- Managing food ordering, GP control, portioning and minimising waste
- Upholding rigorous food safety, hygiene and HACCP standards
- Training, developing and motivating junior chefs, setting the standard by example
What we are looking for
- A minimum of 5 years' experience working in Michelin-starred and/or AA Rosette establishments (essential)
- Proven experience at Senior Sous or strong Sous Chef level in a high-volume, high-standard fine-dining kitchen
- Outstanding technical skill across all sections and a deep understanding of modern culinary techniques
- Calm, confident leadership and the ability to run a busy service with authority
- A refined palate, strong plating skills and real passion for seasonal, produce-led cooking
- Excellent organisation, stock control and kitchen management ability
- A hands-on, professional attitude and a commitment to consistency under pressure
- Full understanding of food safety and HACCP compliance
- Availability to work 5 days per week, including weekends
