The club
Century is an independent private members' club on Shaftesbury Avenue, in the middle of Soho. Five floors, a rooftop terrace, 1,800 members drawn from film, media, music and hospitality, and a private events programme that runs most nights of the week.
The role
You run a section of the bar across member service and private events. Cocktails to spec, speed under pressure, and the kind of presence that makes a room feel looked after. Our members come three times a week. They will know your name inside a month, and you will know their drink.
What you will do
- Make classic and signature cocktails consistently, at volume, to the spec sheet
- Open, run and close a bar section: prep, mise en place, stock rotation, close-down and cash-up
- Serve members and their guests by name, reading the room and pacing service to it
- Deliver bar service for private events, from 20-person drinks receptions to full floor takeovers
- Keep to legal and licensing standards including Challenge 25 and refusal of service
- Maintain cleanliness, hygiene and health and safety standards to EHO level
- Support the bar back and any new starters on your section
What we are looking for
- Minimum one year behind a busy bar. Cocktail bar, hotel bar or members' club preferred
- Real cocktail knowledge: classics without a book, and the palate to build a spec
- Composure at volume. Soho on a Friday is the test
- Discretion. What happens in the club stays in the club
- Right to work in the UK
