Job Summary
We are seeking an experienced and passionate Nepalese Curry Chef to lead the curry section of our busy kitchen. In this role, you will be responsible for replicating authentic Himalayan flavor profiles, formulating proprietary spice blends from scratch, and elevating our curry menu. The ideal candidate will blend deep cultural culinary knowledge with professional kitchen efficiency, ensuring every dish meets our strict standards for taste, presentation, and safety.Key ResponsibilitiesCulinary Operations & Food Production
- Authentic Cooking: Prepare, cook, and present high-quality Nepalese curry dishes, including traditional chicken, goat, wild boar, and vegetarian variations.
- Base & Gravy Development: Create traditional master gravies (such as tomato-onion bases, cashew pastes, and yogurt-infused stocks) from scratch daily.
- Spice Crafting: Roast, grind, and blend whole spices manually to achieve accurate regional flavor profiles (e.g., proper utilization of jimbu, timur, and fenugreek).
- Meat & Vegetable Prep: Supervise and execute the precise butchery, portioning, and marination of meats and seafood.
Station Management & Efficiency
- Section Organization: Maintain an immaculate, well-organized, and fully stocked mise en place at the curry station before peak service hours.
- Speed & Consistency: Execute orders quickly and accurately under intense, high-volume pressure without sacrificing flavor or plate presentation.
- Wastage Control: Practice strict portion control and creative ingredient rotation to minimize food waste and optimize food cost percentages.
Food Safety, Hygiene & Compliance
- HACCP Compliance: Implement and maintain strict food safety protocols, including monitoring and logging food temperatures.
- Allergen Management: Safely handle cross-contamination risks and clearly identify allergens within all curry bases.
- Sanitation: Ensure the curry section, utensils, and heavy machinery are deeply cleaned and sanitized at the end of every shift.
Inventory, Ordering & Teamwork
- Stock Auditing: Monitor inventory levels of specialty Himalayan spices and fresh produce, communicating ordering needs to the Head Chef.
- Staff Mentorship: Train and guide junior chefs, line cooks, and kitchen porters on Nepalese cooking techniques and station safety.
- Menu Collaboration: Assist the Head Chef in developing seasonal specials, modern twists on classic dishes, and tasting menus.
Job Requirements & QualificationsExperience & Education
- Proven Track Record: Minimum 3 to 5 years of professional kitchen experience, with at least 2 years operating specifically as a Curry Chef in a Nepalese, Indian, or Himalayan restaurant.
- Culinary Training: A diploma in Culinary Arts, Professional Cookery, or equivalent industry experience is highly desirable.
Technical Skills & Knowledge
- Culinary Expertise: Proficient knowledge of traditional Nepalese cooking methods, including slow-simmering (khursani tempering) and clay oven (Tandoor) pairing methods.
- Palate & Precision: An exceptional sense of taste and smell to adjust seasoning, acidity, and heat levels dynamically.
- Physical Stamina: Ability to stand for long periods, lift heavy stockpots, and work in a hot, fast-paced kitchen environment.

Pay: £30,000.00-£35,000.00 per year
