We are now looking for a Restaurant Assistant Manager who can carry this legacy forward someone who leads by example, balances the human side of hospitality with operational discipline, and knows how to make both the team and our guests feel proud to be part of Taverna.
Role Overview
The Restaurant Assistant Manager will be responsible for the full day-to-day operations of Taverna Trastevere London.
This includes leading and inspiring the FOH team, ensuring consistent service standards, maintaining strong coordination with the kitchen, and driving financial performance while protecting the culture and authenticity that make Taverna special.
Key Responsibilities
- Lead daily operations to ensure an outstanding guest experience aligned with Taverna’s brand standards.
- Manage, motivate, and train the FOH team to deliver warm, professional, and efficient service.
- Coordinate with the Head Chef and kitchen team to ensure smooth service flow and food quality consistency.
- Oversee rota planning, payroll hours, and staff scheduling with focus on efficiency and morale.
- Monitor P&L performance, cost control, and key operational metrics (wages %, GP, stock levels, etc.).
- Maintain strict compliance with food safety, health & safety, and licensing regulations.
- Handle guest relations with empathy, discretion, and genuine hospitality — turning feedback into opportunity.
- Support recruitment, onboarding, and ongoing staff development.
- Contribute to the strategic growth of Taverna Group through operational excellence and leadership presence.
Who You Are
- You have at least 3 years of management experience in a quality-driven restaurant (Italian or Mediterranean preferred).
- You are hands-on — you don’t manage from the office, but from the floor.
- You combine operational discipline with emotional intelligence and natural leadership.
- You understand what “family service” means: authentic, warm, and detail-oriented.
- You are financially literate: comfortable with P&L, budgets, and performance indicators.
- You thrive in dynamic, high-energy environments and can maintain consistency under pressure.
- You are passionate about Italian food, culture, and hospitality.
