Front of House Operations Manager
Location: Central London
Company: Attendant Coffee Roasters
Working pattern: Monday to Friday, approximately 70% in store and 30% administration
Salary: £36,000 base salary plus approximately £10,000 to £15,000 annual service charge
Estimated take home pay: Approximately £3,000 net per month on average, depending on tax code, pension contributions and other personal deductions
Reporting line: Reporting directly to the Co founder and CEO and Co founder and CFO
The role
Attendant Coffee Roasters is looking for an experienced Front of House Operations Manager to lead and support our café teams across central London.
This is a hands on role for someone who believes that the best operational leadership happens on the floor, alongside the team.
Approximately 70% of your time will be spent in our cafés, supporting managers, coaching teams and improving service and commercial performance. The remaining 30% will focus on planning, reporting, financial analysis, compliance and administration.
You will work closely with the company directors to translate business priorities into clear actions across the estate.
Attendant’s five pillars
The role is responsible for embedding and improving our five operational pillars.
1. Customer Interactions and Service
Ensure every customer feels acknowledged, guided and recognised. Coach teams to deliver thoughtful hospitality, confident recommendations and stronger sales.
2. Music, Ambience and Product Quality
Maintain consistently high standards across atmosphere, cleanliness, displays, food, coffee and overall site presentation.
3. Speed, Quality and Problem Solving
Improve service flow, preparation and team communication while ensuring speed never compromises quality.
4. Brand Consistency
Protect Attendant’s standards across service, communication, menus, retail presentation and promotional execution.
5. Attendant Community
Strengthen customer loyalty, regular recognition and each shop’s relationship with its local community.
Key responsibilities
- Spend the majority of your time working directly with teams in store
- Lead from the front during busy service periods
- Coach and develop shop managers and Front of House teams
- Drive sales, average transaction value, food attachment and customer retention
- Review shop performance and implement clear improvement actions
- Monitor profit and loss accounts, gross profit, Store EBITDA and staff costs as a percentage of revenue
- Support managers with forecasting, rota planning and labour control
- Ensure consistent delivery of the five pillars across all sites
- Conduct regular shop visits, audits and performance reviews
- Provide clear reporting and recommendations to the company directors
- Support operational projects, new openings and wider business improvements
Compliance and site management
- Own Food Safety and Health and Safety compliance across all sites
- Manage shop audits, testing and certification requirements
- Coordinate repairs and maintenance
- Oversee waste management and site level compliance
- Deliver Food Safety, Health and Safety and Fire Safety training
- Maintain oversight of stock movements, wastage and supply chain issues
- Act as the first point of contact for store level IT and software issues
Commercial expectations
The successful candidate must be commercially confident and able to link daily operational decisions to financial performance.

About you
This role would suit an experienced café or restaurant manager who has worked in a fast paced, high volume environment and is ready to progress into a multi site role.
You will be a strong Front of House operator with a proven ability to improve sales, service and team performance.
You will be comfortable working with financial reports, budgets and operational data, while remaining highly visible within the shops.
Essential experience
- Management experience within a busy café, restaurant or hospitality business
- A strong record of improving sales and customer experience
- Experience coaching and developing managers and teams
- Confidence reading profit and loss accounts and key performance indicators
- Understanding of gross profit, Store EBITDA and labour costs
- Experience managing rotas and staffing against forecast sales
- Experience managing Health and Safety and Food Safety compliance in a multi site hospitality environment
- Strong organisational, reporting and problem solving skills
