Apprentice Brewer

We operate a 20-hectolitre (hL), semi-automated, three-vessel BrauKon brewhouse, alongside a GEA centrifuge, CODI canning line, 44hL coolship, three 17hL foeders, a Rizzoli bottling line and a modern on-site water treatment plant for both incoming and outgoing water.
About the Apprenticeship
This is a hands-on training role for someone who wants to build a genuine long term career in brewing. No commercial brewing experience is required, and you do not need a formal brewing qualification to apply. We welcome school and college leavers, as well as people from other backgrounds who are looking for a career change.
Working closely with our small team, you will gradually develop the knowledge, practical skills and confidence needed to contribute across the complete brewing process. The role combines practical work on the brewery floor, including plenty of packaging, cleaning, quality checks and record keeping, with structured study and guided training.
The programme runs for 18 months. You will have a dedicated HIT Vocational Trainer, regular online and face-to-face support, and specialist workshops delivered in partnership with the University of Nottingham’s International Centre for Brewing Science.
What You’ll Learn and Do
- Brew on the BrauKon brewhouse: Learn to plan and control wort production, from raw materials through to transfer.
- Explore ingredients and recipe design: Discover how raw materials shape flavour, beer character and batch-to-batch consistency.
- Develop fermentation and yeast skills: Monitor conditioning, yeast health and beer quality throughout fermentation.
- Learn cellar, finishing and maturation techniques: Build practical experience across both modern and traditional beer styles.
- Build quality and sensory skills: Carry out and record physical, chemical, microbiological and sensory checks.
- Package beer professionally: Use our CODI canning and Rizzoli bottling lines, and learn how storage and handling protect finished beer.
- Improve how we work: Contribute ideas, solve problems, maintain production records, and support stock control and team handovers.
- Work safely and sustainably: Learn about food safety, HACCP, hygiene, essential cleaning, water treatment, resource efficiency and waste reduction.
What We’re Looking For
You do not need to arrive knowing the complete brewing process. We are looking for someone with the right attitude and aptitude for learning with transferable skills.
You will have a genuine curiosity about beer-making and a strong work ethic. You must be reliable and punctual, with the potential to become a highly trusted member of our small team.
- Genuine interest: Enthusiasm for brewing and beer, with curiosity about how ingredients, science, engineering and production work hand in hand.
- Practical curiosity: A careful approach and the confidence to ask questions, follow instructions and learn from feedback.
- Reliability: Excellent time management and the ability to work positively as part of a close-knit team.
- Communication: Basic numeracy, literacy and digital skills are essential, with a willingness to develop them further.
- Physical readiness: The ability to work safely in an active brewery environment, including standing for extended periods and handling ingredients and equipment.
- Essential travel: A full clean driving licence and your own transport are needed due to our rural location.
Useful but Not Essential
- Practical aptitude: Mechanical or engineering ability gained through work, study or personal projects
- Relevant experience: Experience in food and drink, hospitality, warehousing, manufacturing, agriculture or another quality-focused environment.
- Personal interests: An interest in beer styles, sensory evaluation, sustainability or continuous improvement.

Key Details
- Location: Duration Brewing, Abbey Farm, River Road, West Acre, Norfolk, PE32 1UA.
- Hours: Full-time, 37.5 hours per week, mostly Monday to Friday, with occasionalevening or weekend work.
- Programme: Level 4 Brewer Apprenticeship with HIT Training, with a recommended programme duration of approximately 18 months.
- Pay: £8 per hour during the first apprenticeship year—approximately £15,600 per year. After the first year, apprentices aged 19 or over will move to the applicable age-related minimum wage, currently £10.85 per hour for those aged 19–20 and £12.71 per hour for those aged 21 and over. These rates are effective from 1 April 2026.
