Jesmond Dene House is seeking a passionate and creative Head Chef to manage and oversee the kitchen team. Under the direction of the General Manager, the Head Chef is responsible for the smooth running of the kitchen operations, from menu creation to food safety and staff development.
Areas of Responsibility
- Takes responsibility for all kitchen operations, including the main kitchen, pastry, conference & banqueting and kitchen porters
- To act as an inspirational leader to all kitchen employees, setting an example to others in excellent service standards and cleanliness
- To ensure that all employees put the needs of the guest first and that a 'guest focused' culture applies throughout the business
- To ensure that the kitchen is staffed efficiently according to business needs and department wage budgets are met
- To ensure that there is ongoing training within the kitchen, to maintain standards and ensure flexibility throughout the team
- To manage and maximise the financial contribution of the kitchen in line with budget expectations, including maintaining GP margins, efficient purchasing and stock control.
- To ensure that menus are updated regularly throughout the year, with focus on seasonal and local produce.
- Ensure that SOP’s are in place and followed within the department.
- To maintain the quality of the food served, combining high quality ingredients with profitability and value for money.
- Build and maintain relationships with suppliers, ensuring that we are buying the best ingredients at the best prices.
- Ensure that there is strong communication with the wide Hotel team and other departments.
