This role:-
Working closely with the Executive Chef & Head of Food and Beverage, you will turn the Club's culinary direction into consistently excellent service. You will lead with calm authority, protect standards, develop the kitchen team and bring strong commercial and organisational discipline to a varied operation that combines Club dining with banqueting and special events.
This role will suit a Head Chef or exceptional Senior Sous Chef who enjoys being present in the kitchen, values tradition without standing still, and understands the discretion, warmth and attention to detail expected in a private members' club.
What You Will Do:-
· Lead daily kitchen operations, service briefings, section allocation and clear handovers.
· Deliver consistently high standards of food quality, presentation, portioning and timing.
· Manage, coach and develop the kitchen team, setting clear expectations for conduct, attendance and teamwork.
· Support seasonal menu development, specials, Club events and private dining.
· Control ordering, stock, food cost, waste and production in line with forecast business.
· Maintain robust food-safety, HACCP, allergen, health-and-safety and cleaning standards.
· Work closely with Dining Room, Bar, Banqueting and Events colleagues to deliver seamless service.
· Create menus across all areas of the club with the Executive Chef and senior kitchen team.
· Respond positively to member feedback and drive practical improvements to quality and efficiency.
What We Are Looking For:-
· Experience as a Head Chef or strong Senior Sous Chef in a private members' club, luxury hotel, fine-dining restaurant or premium events business.
· A proven ability to lead, train and motivate a professional kitchen team.
· Strong knowledge of menu costing, purchasing, stock control, labour planning and waste management.
· Excellent food-safety, allergen and HACCP knowledge.
· A calm, hands-on leadership style with high personal standards and attention to detail.
· Commercial awareness, sound administration and confidence using Microsoft Office.
· Flexibility to support evening and weekend events when required.
