The Role: The Second-in-Command
Located in the heart of the Cotswolds, our restaurant at Fosseway Garden Centre is a destination for those who appreciate high-quality, seasonal dining. We are looking for a talented and motivated Sous Chef to act as the right hand to our Head Chef and help lead our kitchen team to new heights.
This isn't just about supervising—it’s about inspiring. You will play a vital role in menu development, kitchen management, and maintaining the exceptional standards our Fosseway guests expect.
Your Key Responsibilities
- Kitchen Leadership: Lead the line during service, ensuring every plate leaving the pass is perfect.
- Menu Development: Work closely with the Head Chef to create seasonal, locally-sourced specials that reflect the artisan spirit of Gloucestershire.
- Team Mentorship: Train and develop our Chef de Parties and Commis Chefs, fostering a culture of growth and pride.
- Operations & Compliance: Manage stock control, ordering, and GP margins, while ensuring 5-star food safety and hygiene standards.
- The "Safety Net": Confidently step in for the Head Chef in their absence, running the kitchen seamlessly.
The Ideal Candidate
- Experience: You are currently a Sous Chef or an experienced Senior CDP looking to take the next step in a high-volume, fresh-food environment.
- Culinary Passion: You have a deep understanding of seasonal ingredients and a flair for creative presentation.
- Leadership Style: You lead by example—calm under pressure, organized, and capable of motivating a team during a busy Sunday rush.
- Commercial Savvy: You understand the "business" side of the kitchen, from waste management to labor costs.
