Job Overview
We are seeking an experienced and motivated Sous Chef to support the Head Chef and help launch our kitchen at Malone’s Edinburgh. This is a hands-on role in a fast-paced, high-volume pub environment with sports peaks, events, and an expanding food offer.
You’ll play a key part in delivering consistent, high-quality pub classics, supporting functions/buffets, and maintaining strong kitchen standards, organisation, and compliance.
Duties
- Support the Head Chef in the day-to-day running of the kitchen and service
- Be the kitchen lead in the absence of the head chef
- Help train, mentor, and develop kitchen staff, setting clear standards and pace
- Support menu delivery and development, ensuring dishes are consistent and well-presented
- Maintain food safety protocols, hygiene standards, and allergen controls (HACCP)
- Assist with ordering, stock rotation, stock checks, and waste control to protect GP
- Coordinate prep planning to ensure the kitchen is set up for busy services and sports peaks
- Support delivery of function and event food (buffets, set menus, packages) alongside the core menu
- Ensure the kitchen remains clean, organised, and service-ready at all times
- Work closely with FOH and management to ensure smooth service and a great guest experience
Skills / Experience
- Previous experience as a Sous Chef, or strong Junior Sous / CDP ready to step up in a busy kitchen
- Strong culinary skills and confidence working at pace under pressure
- Solid knowledge of food safety, allergens, and kitchen compliance
- Strong organisation and communication skills
- A positive, reliable leader who sets the tone and supports the team
- Experience with high-volume service and/or events is a strong advantage
