Brewski started life in 2017 as a single restaurant in Chorlton, Manchester, built on one simple promise: nobody leaves hungry. Since then it's grown into one of the North's most talked-about hospitality brands which is famous for monster sharing platters, indulgent North American comfort food, and a cult following that just keeps growing.
In October 2023, Brewski landed in Chester in spectacular style, transforming a Grade II listed building on the historic Eastgate Row into a three-floor, 160-cover destination. It's since become the group's flagship, highest-revenue site and one of the most talked-about places to eat and drink in the city.
Now we're looking for an Assistant General Manager to help lead Brewski Chester from the front; a restaurant-led, food-first site with real energy, and a team that takes real pride in it.
Hours: 40–45 hours per week, including evenings, weekends and bank holidays as the business requires.
What You'll Be Doing
- Leading shifts and managing the floor during high-volume trading periods, including weekends and key events
- Owning weekly sales forecasting, flash reporting, and stock finalisation, and using them to drive decisions
- Writing and managing FOH rotas on Fourth, controlling labour cost against budget
- Coaching, motivating and developing the FOH and bar team — including coffee chats, performance reviews, and PDPs for junior team members
- Leading HR investigations, disciplinaries, and onboarding, in line with company policy
- Driving execution of drinks and food promotions, sales initiatives, and seasonal campaigns
- Reviewing guest feedback and review platforms (e.g. TripAdvisor), spotting trends and taking action
- Supporting recruitment, including advertising roles and shortlisting candidates
- Ensuring full compliance with licensing, food safety, and health & safety standards, including risk assessments
- Deputising fully for the General Manager in their absence, including running the weekly management meeting
What We're Looking For
- Previous management experience in a high-volume, restaurant-led environment is essential
- Confident handling HR matters; disciplinaries, investigations, and people management: this is a must-have
- Pub background welcome, from a food-led pub environment
- Branded or multi-site hospitality experience is a strong advantage
- A hands-on leader who leads from the floor, not the office, and protects standards under pressure
- Strong commercial awareness: comfortable with rotas, forecasting, cost control, and reading a P&L
- A genuine passion for hospitality, guest experience, and developing others
- Confidence using own initiative, working under pressure, and solving problems on the floor
- A proactive, self-aware approach to your own development: you take feedback well and act on it
- Excellent time management and communication skills
- Personal licence holder, or willing to obtain one
