A real step up. We are seeking an experienced and passionate Sushi Chef to join our culinary team in delivering exceptional Japanese cuisine. The ideal candidate will possess extensive culinary expertise, and a deep understanding of food safety standards.
You'll work closely with the Founder and Head Chef , taking genuine responsibility and learning the full picture of what it takes to run a site. As we open further locations, so does your opportunity.
Who we are
Miokuru is a new counter-dining restaurant opened in Soho in June 2026, specialising in temakis alongside Japanese-inspired starters, desserts, and a strong drinks programme of cocktails, sake and wine. Sustainably sourced, predominantly British seafood. Twenty covers at the counter, a small PDR for private hire, and a relentless focus on guest experience. The role is guest facing so being warm, personable and genuinely engaged with every table is essential.
Responsibilities
Operate as part of the sushi team, ensuring efficient workflow and high standards of food quality.
Undertake all aspects of food preparation, including sushi rolling, fish filleting, and other Japanese techniques.
Maintain strict adherence to food safety regulations and hygiene standards across all kitchen activities.
Assit head chef in managing inventory levels, supplies, and ensure proper storage of ingredients to minimise waste.
Develop new sushi recipes and menu items in collaboration with management to enhance customer offerings.
Monitor cooking processes to ensure consistency in presentation, taste, and portion sizes.
Collaborate with front-of-house staff to ensure seamless service delivery and customer satisfaction.
Skills
Proven supervising experience within a busy kitchen environment, ideally specialising in Japanese cuisine.
Extensive knowledge of food production techniques specific to sushi and Japanese dishes.
Excellent food preparation and cooking skills, with a keen eye for detail in presentation.
Solid understanding of food safety standards and regulations applicable within the hospitality sector.
Previous restaurant experience demonstrating roles in high-pressure settings.
Good organisational skills with the ability to manage multiple tasks efficiently.
Exceptional communication skills to coordinate effectively with team members and management.
