The Gig
Independent. Beer-led. South West London. We pour a great pint and we want food that earns its place beside it — bold, generous, properly tasty. Not gastro, not fussy. Food built for beer drinkers and the way they actually eat: small plates for sharing over a few rounds, mains that land hard.
And one big swing: we want London's best pub burger. A burger people cross town for, photograph, and order on repeat. Put your name to it.
What You'll Own
- The burger. A 5-strong range, chased to best-in-London. Patty, bun, build, sauce — obsess over every gram until it's destination-worthy and repeatable.
- The menu. A tight, exciting 8–9 small plates plus burgers and a few other mains. Every dish earns its place and drinks well.
- Execution. Specs the kitchen can nail flat-out on a Friday night. Smart prep, no chaos.
- The seasons. 2–3 refreshes a year to keep it current.
- The numbers. GP, costings, portion specs, suppliers, waste — kept tight.
- The team. Train the brigade, write the specs, embed the standards so they hold without you on the pass.
You
- A proven Head or Executive Chef from quality pubs, casual dining or food-led venues.
- Concept-driven — you start with the idea, not just the dish.
- Serious about burgers, with the craft to chase a best-in-London standard.
- Finger on the pulse — you know what's happening in burgers right now, who's doing it well, and you've got a notebook full of ideas you're itching to try.
- Commercially sharp — GP and menu engineering hold no fear.
- Self-sufficient and happy in a flexible, autonomous role.
- Level 3 Food Hygiene (ideally).
The Deal
