Head Chef / Kitchen Manager
Shaw Hill Golf & Spa Hotel – Allamby’s Restaurant, Chorley
45-hour contract
A fantastic opportunity has arisen for an experienced Head Chef / Kitchen Manager to join Shaw Hill Golf & Spa Hotel and lead the kitchen team at Allamby’s Restaurant in Chorley.
This role is ideal for an accomplished Head Chef who is ready for a new challenge and wants to take the next step in their leadership and management career.
The successful candidate will have strong restaurant and banqueting experience, along with a proven track record of managing a busy kitchen and leading a team of chefs.
Key Responsibilities
- Build, lead and develop a cohesive, motivated and efficient kitchen team
- Oversee all restaurant, hotel and banqueting food operations
- Manage stock levels, stock rotation, ordering and supplier relationships
- Prepare staff rotas and manage labour costs
- Maintain accurate cleaning, training and compliance records
- Ensure the kitchen complies with all food hygiene, health and safety regulations
- Create menu specifications, seasonal dishes and daily specials
- Introduce creative new ideas and contribute to menu development
- Monitor and achieve gross profit, food waste and labour targets
- Implement effective processes and procedures to ensure the smooth running of the kitchen
- Maintain consistently high standards of food quality, presentation and service
- Take full responsibility for the leadership and performance of the kitchen department
- Support and inspire the team to drive the continued success of Allamby’s Restaurant
About You
The ideal candidate will:
- Have previous experience as a Head Chef, Kitchen Manager or experienced Senior Sous Chef in a busy operation
- Have strong restaurant and banqueting experience
- Have proven experience managing and developing a kitchen team
- Be confident managing gross profit, food waste, stock and labour costs
- Have excellent organisational, leadership and communication skills
- Have a strong understanding of food hygiene and health and safety requirements
- Be passionate about food and the hospitality industry
- Be creative, commercially aware and confident in developing menus
- Be willing to take ownership and responsibility for the kitchen operation
- Remain calm and organised in a fast-paced working environment
- Be flexible and available to work evenings, weekends and bank holidays as required

Experience:
