Main Responsibilities and Duties:
1. Keep all kitchen work surfaces (counters, sinks, stoves, walls) clean and sanitized
2. Sweep and mop floors at the beginning and ending of shifts
3. Be ready to clean up spills to avoid hindering operations
4. Wash cookware, utensils and cutlery fast to keep them in rotation
5. Arrange equipment and ingredient deliveries
6. Keep the food and supply storage areas organized
7. Take out the garbage
8. Help with routine food prep tasks (such as peeling and chopping vegetables) when needed
9. All temperature records must be kept up to date signed.
10. All delivery temperature records must be taken and kept up to date and signed.
11. Check all deliveries, count items and check against the delivery sheet. Report any shortfalls to Duty Manager.
12. Ensure all deliveries are stored adequately and immediately.
13. All cleaning scheduled must be performed and signed.
14. To ensure correct storage procedure, with date stickers and stock rotation (earlier fate to be used first) in order to avoid wastage and health and safety risks.
15. Coffee machines must be cleaned and replenished daily and the relevant documentation signed.
16. To ensure the dishwasher is cleaned and maintained according to the instructions, eg. Salting.
17. Ensure that adequate stock levels for cleaning detergent, eg. Machine rinse.
18. To ensure that the kitchen and buffet surfaces have been cleaned with sanitizer.
19. To ensure stock levels are adequate to in house guest occupancies, considering the suppliers delivery schedules.
20. Wear appropriate uniform with name tag, black trouser with black socks or skirt with tights.
21. Clean appearance: ladies’ hair must be tied back, no nail polish, only one pair of ear studs. Men’s hair clean cut; clean shave; no body odour, no strong perfume, only wedding band can be worn.
22. Greet guests upon arrival and explain breakfast items. Offer assistance.
23. Replenish buffet
