We at Dark Horse Pubs are looking for an an enthusiastic head chef to join the team at our independently run The Waterman’s Arms on the Isle of Dogs. We have established ourselves as the go to gastro pub of the area serving modern british seasonal dishes alongside some classic favourites.
The Waterman’s Arms is an historic Grade II listed neighbourhood bar with a standout food offering. Open for breakfast and dinner with the addition of seven hotel rooms.
Our team is at the heart of how we will hope to deliver our guests a great experience, should they come for a quick drink, breakfast, bar snack or a three course meal. We have a regularly changing food menu and work with a range of excellent UK suppliers. This is a great opportunity for an experienced kitchen manager/ head chef looking to take the next step into management whilst having support from the managing directors.

o 40-45 hour working week. 2-3 days off a week.
o Great earning potential. Initial base rate increasing after 3 months so long as targets are met, quarterly bonus subject to targets.

We Are Looking For Someone Who is:
- Experienced previously as a Kitchen Manager/ Sous chef within a restaurant or food led pub.
- Reliable, punctual and organised.
- Have a good "can do" attitude, be able to write recipes, and work woth a seasonal rolling menu.
- Capable and confident in providing ‘Hands On’ management and supervising a small team.
- Be able to take control of the day to day running of the kitchen and food safety diligence.
- Food and hospitality driven.
- Food hygiene level 2 and allergen awareness certificates.
- Excellent stock control and wastage control.
- Interested in food provenance and seasonality, with an emphasis on modern British cuisine.
- Target driven.
- Comfortable with working independently.
The most important requirements, however are having a positive, can-do attitude along with a real passion for the hospitality industry!
