Shilstone House is a family-run country estate in South Devon. Located in our flower-filled Courtyard, The Fire Shed is an outdoor wood-fired kitchen and bar serving seasonal food, local drinks and relaxed hospitality throughout the warmer months.
The Fire Shed combines wood-fired cooking, outdoor dining, lawn seating and a busy Courtyard Bar to create one of the estate’s most vibrant guest experiences. Working closely with our kitchen and estate teams, we focus on quality produce, warm hospitality and creating memorable experiences for every guest.
The Role
We are seeking an experienced, energetic and hands-on Fire Shed Manager to lead the day-to-day operation of The Fire Shed.
You will be responsible for ensuring exceptional guest experiences, leading and developing the team, maintaining high operational standards and driving commercial performance. This is a practical management role requiring strong leadership, organisation and a passion for hospitality.
Key Responsibilities
- Oversee the day-to-day operation of The Fire Shed and Courtyard Bar
- Lead, motivate and develop the Fire Shed team
- Deliver exceptional guest experiences and ensure consistently high service standards
- Manage staffing levels, rotas and labour costs
- Recruit, train and onboard new team members
- Monitor sales performance and identify opportunities to increase revenue
- Ensure food, drink and service standards are maintained at all times
- Manage stock ordering, stock control and wastage
- Maintain cleanliness, organisation and presentation throughout the operation
- Ensure all food safety, health and safety and licensing requirements are followed
- Handle guest feedback and complaints professionally and effectively
- Work closely with the kitchen team to ensure smooth service and communication
- Take responsibility for opening and closing procedures
- Complete regular reporting and communicate operational updates to senior management
- Support the wider estate operation when required
Skills & Experience
- Previous management experience in a restaurant, bar, café or hospitality venue
- Strong leadership and people management skills
- Excellent communication and organisational abilities
- Ability to remain calm and positive in a fast-paced environment
- Experience managing rotas, labour costs and stock control
- Strong focus on guest experience and attention to detail
- Good understanding of food safety and hygiene standards
- Personal licence holder desirable but not essential
- Flexible availability including evenings, weekends and bank holidays
