Venison & General Butcher - Elveden Courtyard
We are seeking a butcher to join our skilful and friendly team. We are particularly passionate about our high quality venison and other types of game. Our deer populations roam freely over 22,500 acres of heathland, grassland, woodland as well as the farm fields; where they find our crops of high-quality potatoes, carrots and cereals as delicious as we do.
Our professional game management team, manage our deer to ensure population numbers of our Red, Roe, Fallow and Muntjac deer are sustainable, and the herds are fit and healthy. The venison is hung for up to fourteen days before being professionally butchered.
You will have great customer service skills be a team player who is also able to work unsupervised when required. This role is offered as a full-time position (but part-time will be considered) working within our experienced in-house butchery at the Elveden Estate Courtyard.
Main duties will be:
- Supporting in the production and packaging of our high quality fresh butchered meat products to our pubs, school & restaurants and longer term to wholesale customers.
- Effectively complete all aspects of butchery up to and including top level carcass work.
- Prepare, stock, cut, weigh and wrap meat products to a high standard.
- Sausage and burger making skills and experience.
- Ensuring records are kept up to date and compliant with HACCP and Safer Food Better Business standards.
- Ensure proper product handling to control shrinkage and waste.
- Review inventory for product rotation on a daily basis to prevent shrinkage and damages.
- Receive, inspect, and store meat properly upon delivery to ensure meat quality.
- Managing preparation of food products, catering, and special orders.
- Produce and submit receiving records on a timely basis.
- Order meat products according to anticipated sales and seasonal needs.
- Provide exceptional customer service while maintaining a high level of productivity.
- Ensure the visual presentation of the counter is always maintained to a high standard.
- Create a positive environment for our teams to work in.
- Handling feedback, queries, and complaints from customers.
- Solving of day today problems as they arise and carrying out any other duties commensurate with the role or as requested by the manager.
