Harry’s is the critically acclaimed restaurant at The Gallivant, a boutique hotel by the sea. Led by Executive Chef Matthew Harris (ex-Bibendum), Harry’s has quickly established itself as a serious, food-led restaurant known for consistency, quality, and warm but professional service.
Harry’s operates as part of a busy, year-round hotel. With a second site opening next year, we are building a team of people who want a career in hospitality and are comfortable working in a dynamic, multi-service environment.
The role
We are looking for capable, professional waiters with existing foundations in service, food, and wine.
Harry’s is not a simple, single-service restaurant. The Gallivant is open breakfast, lunch, and dinner, and the restaurant team supports a wider hotel operation. This includes a small number of weddings each year and regular corporate or private events, all delivered to the same service standards as the restaurant.
There is no “closing the doors between services”. The work requires flexibility, teamwork, and a professional attitude to busy days.
Service is structured, standards matter, and everyone is expected to contribute fully during peak periods. This includes evenings, weekends, public holidays, Christmas, and New Year.
Hospitality is demanding, but it is rewarding for people who enjoy pace, responsibility, and being part of a well-run operation.
This is not an entry-level training role in the traditional sense. Training focuses on refinement and consistency. However, we will consider exceptional entry-level candidates who are smart, motivated, and genuinely interested in food, wine, and dining culture, particularly those who already dine out in good restaurants and understand what great service looks like.
What we’re looking for
You will be a good fit if you:
- Have experience in a quality, food-led restaurant, or strong foundations and clear potential
- Are comfortable learning menus and building food and wine knowledge
- Can manage a section calmly and professionally, or are ready to step up
- Understand structured service, pacing, and attention to detail
- Are adaptable and comfortable working across restaurant and event service
- Take responsibility for standards, reliability, and teamwork
Supervisory experience is welcome but not required. Strong performance, sound judgement, and leadership are recognised, and additional responsibility is offered as the business grows.
