NANAKAI – our bar and restaurant – is based on an authentic Japanese Izakaya. It will offer high quality drinks and simple dishes which are served throughout the day. The bar and restaurant will be open to the public.

Job Purpose:
Fully responsible for managing the bar, the bartender is responsible for providing friendly and efficient beverage service to TARKA guests while maintaining a clean and organised bar area. The NANAKAI bar is heavily influenced by Japanese izakaya style so reflecting an appreciation for this style of service and aiding in cultivating this type of atmosphere is essential. The bartender prepares and serves alcoholic and non-alcoholic drinks, plays music, handles cashless transactions, and ensures a positive experience for customers. The bartender is also responsible alongside the F&BManager/Deputy Manager for creating a series of exciting and innovative events that enhance the TARKA & NANAKAI brand.
Although advertised separately, we will be cycling NANAKAI staff flexibly through a variety of FOH positions. As such, this role would strongly suit someone looking to broaden their range of experience and competencies.
There will be ample opportunity to progress within this role. TARKA is a brand-new concept, with Edinburgh as the company’s first and flagship location. Candidates who excel in their role will be promoted to Supervisor positions quickly. Those who stay with us for a duration may be offered leadership positions as the group expands (inter)nationally.
Main Accountabilities:
Beverage Preparation and Service:
- Prepare and serve a variety of alcoholic and non-alcoholic beverages, specified by management that correlate with the Japanese influence of the bar.
- Provide recommendations and guidance to guests on drink selections based on preferences and menu offerings.
- Ensure that all drinks are served promptly, accurately, and with appropriate presentation.
Customer Interaction:
- Greet guests warmly and engage in friendly conversation to create a welcoming atmosphere.
- Take orders from guests, process transactions accurately, and handle card payments using the point-of-sale (POS) system.
- Anticipate and fulfil guests' needs, including offering to refill drinks and offering assistance as required.
Bar Maintenance and Organisation:
- Maintain cleanliness and tidiness in the bar area, including wiping down counters, relaying glassware to the kitchen porter, and disposing of empty bottles and rubbish.
- Ensure that bar equipment, such as shakers, glassware, and utensils are cleaned, sanitised and properly stored.
- Monitor inventory levels of beverages and bar supplies, and restocking as needed to avoid shortages during service.
- Ensure the safe and secure storage of stocks and supplies, particularly during closing
- Clear tables and assist with reception and the cafe when required
Compliance and Safety:
- Adhere to all relevant licensing laws and regulations governing the sale and service of alcoholic beverages.
- Follow established procedures for responsible alcohol service, including checking identification, refusing service to intoxicated guests and recording this in the H&S book.
- Assume responsibility for resolving day to day health and safety issues and report any maintenance issues to management for prompt resolution.
Qualifications and Skills:
- Previous experience as a bartender or bar server in a restaurant, pub, or bar setting preferred.
- Level 2 food safety and hygiene certificate.
- Knowledge of alcoholic and non-alcoholic beverages, including cocktail recipes and garnishes.
- Excellent customer service and communication skills with the ability to interact professionally with guests.
- Strong multitasking abilities and the capacity to work efficiently in a fast-paced environment.
- Attention to detail and the ability to maintain cleanliness and organisation in the bar area.
- Flexibility to work evenings, weekends, and holidays as required.
