The Fresh Fish Shop is looking for an exceptionally organised and proactive Production & Compliance Coordinator to support our busy seafood production and wholesale operation in Bermondsey.
This is an important role within a small, ambitious and fast-moving business. You will help ensure that our operational records, compliance systems, staff documentation and internal reporting remain accurate, organised and up to date.
We are not looking for someone who simply waits to be given administrative tasks. We need a confident and dependable person who can work independently, identify what needs attention, chase outstanding actions and make sure things get done.

The role
Working closely with the Managing Director and production team, you will help maintain the systems and controls that keep our operation running effectively.
Your responsibilities will include:
- Coordinating production, operational and compliance administration.
- Checking that required records and due-diligence paperwork are complete and accurate.
- Maintaining organised, audit-ready compliance files and systems.
- Tracking outstanding actions and following them through to completion.
- Producing clear and regular operational reports for the Managing Director.
- Maintaining trackers covering areas such as compliance, stock, waste and operational performance.
- Supporting staff onboarding, inductions and new-starter documentation.
- Maintaining accurate personnel, training and employee records.
- Helping create and update procedures, forms, checklists and internal systems.
- Highlighting risks, missing information and recurring problems promptly and honestly.
- Supporting preparations for food-safety, certification and customer audits.
- Helping the business become more organised, efficient and consistent.
This is primarily an internal production and compliance role rather than a customer-sales or general office position. You will spend time both in the office and within the operation, checking that agreed systems are being followed.

Previous administrative or coordination experience is essential.
Experience within food production, manufacturing, hospitality, wholesale, logistics, compliance or FMCG would be highly beneficial. Familiarity with food-safety documentation, staff onboarding, audits or due-diligence systems would be an advantage, but training can be provided to the right person.

Hours and pay

- 30-minute unpaid break each day.
- 22.5 guaranteed paid hours per week.

- Based on-site in Bermondsey, London SE16.
