Executive Chef Manager

Located in Stratford, London Juniper provides Health and Safety Consultancy, Catering and Cleaning Services mostly within the Education and Public Sector.
Job Role:
Working with Newham council to deliver a catering service to their flagship building Dockside 1000 we are looking for an Executive Chef Manager, who is a passionate activist for the food we need for people and planet, who can help us evolve the restaurant into an example of everything a staff food hub should be for councils.
Newham are taking actions on big issues across health, climate and environment. This role will require a collaborative approach to working ensuring that key initiatives are considered such as:

Key Responsibilities:
- Create innovative new menus with a “Modern London” feel to reflect the diversity of the London Borough of Newham and the key priorities of Climate Now and Sustainability through the inclusion of a wide range of vegetarian and plant based meals.
- Train, develop, Induct, manage and motivate a team of 10-15 to meet and exceed existing food preparation and service standards.
- Act as visible front of house presence to promote impression of a chef at work in a high standards environment and proactively interact with customers to obtain feedback.
- Work with suppliers and source new local innovative suppliers to deliver quality, seasonal menus which react to market trends.
- Manage a budget of approximately £750,000 - £1,000,000.
Our Ideal Candidate:
- You are a chef who understands the big issues and can help us build our Dockside Canteen and wider catering and hospitality offer.
- Confident preparing an offer that is ⅔ vegan and vegetarian (and ⅓ sustainable seafood and low carbon meat)
- Knowledgeable about Modern London food from street food to restaurants, specialty coffee and casual dining to markets, shops and wholesales.
- Excited by the food in Newham London both our local ingredients and our roots and links that stretch all over the world.
- You think that the diversity, depth and breadth of culinary inspiration and tradition you find in Newham is exactly what the food for our future needs to include.
- Comfortable setting a standard and showing leadership across all aspects of a food offer from SMART cakes to speciality coffee to eco-cleaning, waste reduction and composting, and delivering a great customer experience at points of sale and service.
- Have proven experience of successfully motivating and managing a team
- Have strong leadership skills
- Illustrate they have a proven track record of successfully managing Contract Catering
- Have experience of running a commercial restaurant, have speciality coffee experience and skills and experience training baristas
- Have experience of delivering hospitality
- Have a genuine interest in customer service excellence
- Be highly confident and positive, self-motivated and able to work well under pressure
- Have an eye for detail and a flair with food and customers.
- Have a keen understanding of our client, London Borough Of Newham and how their priorities link in to the catering service
